Cranberry Gingerbread Granola

Ingredients

Dry Ingredients

  • 5 cups rolled old fashioned oats 
  • 1/2 cup Spiced Gingerbread Sugar
  • 1/3 cup chia seeds
  • 4-5 cups nuts / seeds (walnuts, almonds, pumpkin seeds, pecans, sunflower seeds, sesame seeds)
  • 1/2 box of cereal (I use a mix of 4 cups whole grain flakes, 2 cups unsweetened toasted o's, and 3 cups rice chex)
  • 1/2 tsp cinnamon 

Wet Ingredients

  • 1 cup oil
  • 1 cup molasses
  • 1/4 cup water
  • 1 tbsp vanilla
  • 1 cup unsweetened dried cranberries (added during last 20 minutes 

Directions
1. Mix dry and wet ingredients together except for cranberries
2. Bake at 300° for 1 hour on a baking sheet, turning every 20 minutes
3. After 40 minutes of baking, add cranberries.
4. Let cool. Store in an airtight container. Serve with ice cream or greek yogurt, use as a nutrient dense trail mix snack for magical hikes, or have as a breakfast cereal with your choice of milk. Enjoy!
